cup evaporated skim milk

cup pumpkin puree
1/3
cup fat-free, egg substitute
1/3
cup apple butter

teaspoon vanilla
1/2
teaspoon ground cinnamon
Microwave milk for 1 minute. In medium bowl, whisk pumpkin puree, eggs, apple butter, vanilla and cinnamon. Slowly add milk and mix well.
Microwave for 8 minutes. Rotate during cooking. Serve warm or refrigerate. Makes 6 servings.
