Here's a lighter alternative to pumpkin pie for holiday -- or everyday -- meals. For an elegant presentation, serve this pudding in your fanciest crystal goblets.

1cup evaporated skim milk
1cup pumpkin puree
1/3cup fat-free, egg substitute
1/3cup apple butter
1teaspoon vanilla
1/2teaspoon ground cinnamon

Microwave milk for 1 minute. In medium bowl, whisk pumpkin puree, eggs, apple butter, vanilla and cinnamon. Slowly add milk and mix well.

Microwave for 8 minutes. Rotate during cooking. Serve warm or refrigerate. Makes 6 servings.
