6ripe bananas (medium size)
1cup granulated sugar
1 2/3cup all-purpose flour
1/3cup soy flour, defatted
1teaspoon baking powder
1/2teaspoon baking soda
1teaspoon vanilla
1cup golden raisins
1/2cup walnuts, chopped

Preheat oven to 350. Mash bananas and sugar together. In another bowl, mix both flours, baking powder and baking soda. Stir in banana mixture and vanilla. When thoroughly blended, add raisins and nuts if desired. Pour into a nonstick loaf pan or use soy cooking spray on a regular loaf pan. Bake 60 to 75 minutes. Cool slightly and remove from pan. Cool completely before slicing.

YIELD: 8 servings
