2/3cup sifted soy flour
3/4teaspoon salt
1cup sifted all-purpose flour
1/4teaspoon baking powder
3/4teaspoon baking soda
1 1/2teaspoon cinnamon
1/2teaspoon ground cloves
1/4teaspoon nutmeg
1 1/4cups sugar
1/4cup soy oil
4egg whites, well beaten
3/4cup canned pumpkin
2tablespoons water

Sift together soy flour and all-purpose flour. Measure other dry ingredients except sugar and sift together with flour. Set aside. Cream soy oil and sugar together. Add egg whites and beat until light. Blend in pumpkin and water. Add dry ingredients in two portions, blending well after each addition. Pour batter into greased 9x5x3-inch loaf pan. Bake at 350° for 65 to 70 minutes. Remove loaf from pan immediately and cool on wire rack.

YIELD: 10 servings
