BJC HealthCare icon Maple-Mustard Glazed Ribs

1slab (about 3 1/2 pounds) pork spareribs
2/3cup real maple syrup
1/4cup cider vinegar
1-1/2tablespoons Dijon-style mustard
2cloves garlic, minced
1/2teaspoon hot pepper sauce
1/4teaspoon salt

Remove membrane from ribs, if desired. Cut slab in half. Stack slabs bone-sides together. Tightly wrap in heavy-duty foil. Place packet on grid over medium coals. Cover. Grill 1 hour, turning occasionally. Meanwhile, in small saucepan, combine remaining ingredients. Cook over medium heat 15 minutes, stirring occasionally, until slightly reduced. Remove ribs from foil. Place directly on grid. Cover. Grill 12-15 minutes, basting generously with sauce and turning frequently, until meat is tender and glazed. Cut into serving-sized pieces.

YIELD: 3-4 servings
