BJC HealthCare icon Garden Tortellini Soup
BJC HealthCare (SM)

414.5-ounce cans low-sodium chicken broth
1small onion, diced
116-ounce package frozen cheese tortellini
1medium zucchini, diced
1medium tomato, coarsely chopped
1cup fresh or frozen corn kernels
1/2teaspoon garlic powder
1/4teaspoon dried thyme leaves
1/4teaspoon ground black pepper
Shredded asiago cheese

In 4-quart stockpot, combine chicken broth and onion. Bring to a boil over high heat. Boil 5 minutes. Add tortellini. Return to a boil. Add zucchini, tomato, corn and seasonings. Reduce heat. Simmer 3-5 minutes until vegetables are tender. Top each serving with shredded cheese.

YIELD: 6 servings
