BJC HealthCare icon Pesto Tortellini Salad
BJC HealthCare (SM)

1package (3/4 ounce) fresh basil
2large cloves garlic
2ounces (1/2 cup) shredded asiago cheese
1/2teaspoon salt
1/2cup extra virgin olive oil
116-ounce package frozen meat tortellini, cooked according to package directions and drained
1small red bell pepper, diced (about 1 cup)
2/3cup thinly sliced green onions
1/2cup pitted Kalamata olives, halved

In work bowl of food processor fitted with steel knife blade, coarsely chop basil and garlic. Add cheese and salt. With machine running, add oil in slow, steady stream. Process until smooth. Toss with pasta along with remaining ingredients in large bowl. Cover. Chill several hours or overnight.

YIELD: 8 servings
