| Super Grilled Veggie Wraps | ||
2 teaspoons olive oil ½ cup chopped white onion ½ cup shredded carrots ½ cup chopped red or green bell pepper 1 ½ cups chopped summer squash (zucchini) 1 cup spinach ¼ teaspoon ground black pepper 4 tablespoons fat free cream cheese 4 (7 inch) whole wheat tortillas Heat oil in skillet over medium heat. Add onion Carrots and bell pepper and cook for three minutes. Stir in the summer squash and cook another three minutes. Add spinach and season with pepper. Remove from heat and allow to cool before assembling the wraps. Spread one tablespoon of cream cheese on each tortilla. Add vegetables, roll tight, and cut each wrap in half.
