Oysters are a good source of important minerals, including iron and zinc. They even contain a fair share of copper, which helps regulate cholesterol metabolism. The low-fat milk in the recipe helps in preventing bone loss.

1 onion, minced
1 tablespoon olive oil
1 clove garlic
1 stalk celery, minced
1 baking potato, diced
1/2 teaspoon dried savory
1/2 cup bottled clam juice
1/2 cup corn
1/4 cup minced fresh parsley
1 1/2 cups defatted chicken stock
1 1/2 cups small oysters, drained
1 1/2 cups one percent low-fat milk

In a 3-quart saucepan over medium heat, sauté onion and celery in oil until tender. Add garlic and savory. Stir 30 seconds. Add potatoes, stock and clam juice. Bring to a boil. Cover. Reduce heat. Simmer 15 minutes. Stir in corn and oysters. Simmer 5 minutes until the edges of oysters have begun to curl. Add milk and parsley. Heat briefly.
