Broccoli is a vegetable superstar, overflowing with vitamins.

1/2cup diced onion
2teaspoons olive oil
1clove garlic, minced
3cups defatted chicken stock
2cups chopped broccoli florets
1small red potato, peeled and diced
2tablespoons minced fresh parsley
1/2teaspoon dried tarragon
1/2cup nonfat sour cream

In 2-quart saucepan over medium heat, sauté onions in oil until tender. Add garlic and stir. Add stock, broccoli, potatoes, parsley and tarragon. Bring to boil. Reduce heat to medium and simmer 10 minutes until vegetables are tender. Remove from heat. Stir in sour cream. Makes 4 servings.
