BJC HealthCare icon Baked Sweet Potatoes with Ginger and Honey

This nutritious side dish is good alternative to high-fat candied sweet potatoes or yams.

1can small whole sweet potatoes, cut into half-inch cubes
1/4cup honey
1 1/2tablespoons grated fresh ginger
1tablespoon olive oil
1teaspoon ground cardamom
1/4teaspoon ground black pepper

Preheat oven to 400. In large bowl, combine sweet potatoes, honey, ginger, oil, cardamom and pepper. Coat an 8X8 baking dish with nonstick cooking spray. Add the sweet potato mixture. Bake 20 minutes.

218 calories, 3.5 grams fat, no cholesterol, 16 mg. sodium
